I don't know how many times a week, (maybe every day?), I think about how hard life is. It is so extremely hard. For me, it is hard because of all the different personalities, all the different expectations, all the different trials, the need for money, and the fact that nobody is perfect. Mistakes are always being made and all we want is to be happy and stress free. Life can be so simple at times but sure enough, it gets complicated all at once and unexpectedly! This week has been one of the longest weeks of my life. I ended up putting my two weeks in at the office job I had gotten a few weeks ago. I got offered a different job and yes, I am going back to nannying. It is what I do best, and it is offering way more. It just seemed like a no brainer for me to not pass it up. Since starting the nanny job, I feel like I am never able to just sit and relax. I go to the office job in the morning (Full of stress and being yelled at) and then go straight over to the nanny job where I have to be on my feet the entire time taking care of 4 kids. I am exhausted and just the fact that it is Saturday, and I have no obligations, has been amazing. I stayed busy for sure but it was a busy consisting of the things that I wanted to do. I wish the weekend could be longer though. I don't even want to think about going back to work after tomorrow.
I am finally able to update this blog too! 5 days is too long haha so I apologize for that!
I made an awesome lunch the other day. I bought canned tuna at the store. It is SCD legal as long as it has no broth. I really wanted to make tuna salad but I knew that I couldn't use mayonnaise. I had to get creative. I had some coconut cream that I had set aside in the fridge from a can of coconut milk I had used. I hadn't whipped it yet and I noticed that it had similar consistency as mayo does. I figured it was worth a shot. I absolutely loved how it turned out and hope you enjoy it too :)
No-Mayo, Tuna Wrap
1 can of tuna (Bumblebee Very Low Sodium, Albacore. It is in a gold can)
4-5 tbs of coconut cream (Scooped off the top of your canned coconut milk)
Salt and pepper to taste
1/4 tsp of cayenne
3/4 - 1 tsp of thyme
1 tsp of of fresh lemon juice
1 small celery stock, diced
Green Onion, Diced (optional)
Place all ingredients in a bowl and mix together with a fork. Simple and Easy.
Serve on lettuce over some sliced tomatoes. This is optional of course, but I enjoyed it this way with green onions as a garnish on top :)
