I make black beans all the time with my mini crock pot. I use the mini crock pot because I am only making them for me. My husband isn't a big fan of black beans. I love them though. If you wanted to make more, you can definitely use a bigger crock pot to fit more beans :)
Mini Crockpot
2 cups of dry black beans from the bulk section of any grocery store
3-4 cups of water
I recommend soaking the black beans in water over night before cooking them in the crock pot. Rinse them well after soaking.
I pour the black beans into the crock pot and start with adding just 2 cups of water with them. I set the crock pot to high and just keep an eye on it. When the water looks to be absorbed, add more water. Cook the beans for a total of 4 hours. I added almost 4 cups of water total.
Also, if you are feeling fancy, add some diced onion or minced garlic to the mix :)
I keep these cooked black beans in a tupperware container to eat through the week. I like to add cumin, salt, and cayenne pepper when I heat them up.
