So, things are going very well with my challenge! I am already noticing a tremendous change. I am so embarrassed to post my before stage just yet but hopefully with more time, I will see more results and will be more confident in sharing the pictures. Only time can tell. Anyways, I have made many new resolutions for this year and one of them is to find inner peace every day. Stress really can get the best of me and it can cause my Crohns to act up. So I have decided to try and make a change. It is funny though because it hasn't been very hard. It has been easier for me to be happier and less stressed just by accomplishing my daily goals that I have set for myself. First, I am taking care of my health by doing this challenge. I am eating right and exercising and drinking plenty of water. Also, I have been studying my scriptures every night. My in laws bought us the neatest book where it makes reading the scriptures a lot easier to understand. It has helped me so much and I am grateful for the peace I get from that :)
In case you didnt know, I cut my hair. I donated 12 inches to Locks of Love. Just realized that I havent posted a picture of it yet. I cut it the day before the new year. I was debating it for a while but decided to finally do it and I am so grateful I did. It is so much easier to handle now :) Usually I start to dislike my haircuts after a week or two but I am still loving it. My sister in law did a great job!
So I wanted to share with you the amazing recipe that this Paleo Challenge introduced me to. It is seriously probably my favorite vegetable dish now. SO much flavor. I tweaked it a little bit so I will post the link to the original recipe and then explain to you what I changed. I am sure it would taste great with all her ingredients, but I just didn't have it on hand. I have yet to try the ribs that are shown on this same page. I try those tomorrow :)
Mediterranean Vegetable Bake
So I tweaked this recipe by using white wine vinegar instead of the actual wine, and then I did not include the mushrooms. I am not a big mushroom fan. I also did not use fresh rosemary, I used dry. I watched the tutorial video after and realized that I stacked my vegetables different in my dish as well. Instead of layering them, I stacked them up in rows…. shouldnt make a difference though :P
This was a picture of my leftovers the next day. Excuse the paper plate haha. I just ate the vegetables with some grilled chicken. Seriously smells and tastes amazing! I hope you give this easy recipe a try!!! Happy Blogging.
