Our new chicks!

Sorry it has been so long since I have last posted. Life has kept me pretty busy this last week. Working the two jobs and taking courses online made it to where I had little time for any real down time. As of Friday, I now only have one job. Thank goodness. The last two weeks at the doctors office went pretty fast. What is funny though is that the last week working there, the job started to not seem so bad. Not sure if it was because I was getting the hang of it more or if it was more the fact that I was really enjoying talking to certain patients over the phone. I received phone calls from some of the nicest people who really made me feel like I did a great job helping them. One lady actually kept telling me how nice I was and that she is sure that this doctors office is great just because I work there. She was a new patient and was hoping I would be there when she came in for her first appointment. I had to let her know that my last day was Thursday. SO, the patients definitely made my experience of leaving bittersweet. This new job I have nannying though is great and well worth it. I have the time to go to the gym in the mornings again. The only downfall is that I am always cleaning. So by the time I get home, I don't even want to clean my own house. I am going to have to hire a house cleaner for myself :P

Another exciting thing that happened this week is that we went out and bought our first batch of chicks!! We ended up buying a total of 12. Clayton and my brother have been working so hard on building our chicken coop and it could actually hold a total of 40 hens if we wanted to. It is huge. I can't wait to be able to post pictures when it is finished. For right now, our chicks are in a box with a heat lamp and we are hoping to get the coop finished before the time the chicks outgrow their box.

 So this is the progress with the chicken coop. It is actually farther along than this but I have yet to take a pic of the recent progress. I am so excited for it to be finished!!

I have a new recipe! It is awesome for fall and a stir fry which is EASY for any weeknight meal.

Fall Stir Fry: serves about 4
1 lb of Grass-fed, Ground Beef (could also try ground pork)
1 tsp fennel
1 tsp cinnamon
1/2 tsp sea salt
1 tsp savory
1 tbs coconut oil
2 tbs honey
salt and pepper to taste
1/2 butternut squash, small cubes, skin peeled
1 large red apple, diced

I served mine over steamed green beans

Brown beef in a large pan. Set cooked meat aside and drain the fat. Place cubed butternut squash and apple into the pan with the coconut oil and set to med-high heat. Add cinnamon and sea salt. When the squash has softened. Add the beef back into the pan and add the rest of the ingredients with salt and pepper to taste. Eat this stir fry by itself or serve over green beans, or spaghetti squash! ENJOY!
