October went by so fast! I hope you all had a great Halloween. Clayton was out of town and so I ended up spending the night by myself at home. I got some cleaning done but ultimately enjoyed watching my favorite shows. Master Chef and my new favorite, Hart of Dixie. I don't know what I would do without Netflix and Hulu. HA we don't have cable. I also spoiled myself and made a pizookie. YES, it was grain free and dairy free :) Click here for the awesome recipe. I used a 100% cocao chocolate bar and used a grater to get a bunch of pieces of the bar into the batter. It worked great :) I didn't have ice cream to put on it either, so I just poured coconut cream over the top! So perfect! It was so good, that I ended up eating two. The batter for this recipe makes for two. haha
I have been perfecting this pumpkin waffle recipe that I came up with and I think I have finally got it where I want it. I love pumpkin and this is definitely a great fall breakfast :)
Pumpkin Waffles: Serves about 2 waffles
1/4 cup of pumpkin puree
1/4 cup of coconut milk
2/3 cup almond flour
1/3 cup coconut flour
1/4 tsp baking soda
1/8 tsp sea salt
1/2 tbs pumpkin pie spice (or just add dashes of cinnamon, ginger, nutmeg, and cloves)
3 tbs honey
2 eggs
1 tbs coconut oil, melted
1/2 tsp vanilla extract
Plug your waffle iron in so it can start heating up.
1. Mix the eggs, coconut milk, vanilla, and honey in a small bowl. Whisk it good.
2. Add the almond flour, coconut flour, baking soda, salt, pie spice, and pumpkin puree on top of the liquid mixture and then stir well.
3. Add in the melted coconut oil, stir well.
4. Feel free to add chocolate chips. At this point, pour batter into the maker and then enjoy! It made two good size waffles for me :) I drizzle honey all over and if you have extra pie spice, sprinkle it on top!
